Foolproof Surf and Turf at Home

This weekend we celebrated my boyfriend's birthday with a romantic dinner at home prepared by yours truly.  I love opportunities to experiment with new recipes and to have an excuse to splurge on pricey cuts of meat and overpriced EZ peel jumbo shrimp.

This meal was the easiest "fancy" dinner I have made in a while and is pretty foolproof, which makes the whole process a lot less stressful and prevents potential meltdowns.

Marinated Lamb Chops
5-6 lamb chops
1 tablespoon of olive oil
Juice and zest of 1 lemon
3 cloves of minced garlic
Salt and pepper

Marinate the lamb chops in a mixture of all of the ingredients above for at least 30 minutes and let them sit at room temperature to ensure even cooking.  Heat an oiled skillet over med-high heat and sear the lamb chops for 2-3 minutes on each side.

Garlic Butter Shrimp
Pat shrimp dry and season with salt and pepper.  Heat oil in a large skillet then add the shrimp.  Sear 1-2 minutes per side – and they should be done.  Those suckers cook fast and the worst thing ever is chewy, overcooked shrimp.  Remove the shrimp from the pan once cooked.  Add a tablespoon of butter, a squeeze of lemon, 2 cloves of minced garlic, a splash of dry white wine and a little water or chicken broth to the hot shrimp pan.  Stir and heat for 1-2 minutes until flavors are combined and pour over the shrimp to serve. I added some fresh chopped basil to make it pretty.

That is all it takes for a perfect family-style surf and turf feast!  We paired our meal with chardonnay and roasted asparagus.

And then we decided to drink our dessert that night at a local bar...
